The name already says it all about this highly prized cured meat. In Tuscany, loin means the best, the most tender, the most sought-after part, and indeed that’s what we at Terra Toscana try to achieve in this product. Assured of the quality of the raw material, we try to enhance the final product through natural seasoning and the addition of simple spices. It is enjoyed by first savouring its aroma it on a nice bed of gentle salad, extra virgin olive oil, semi-mature cheese, and those who like it can add a drop of lemon.

Origine del nome

Loin, the light part of pork meat, which is usually used to make pork loin or steaks. I make no secret of the fact that convincing Gino to salt this part took some persuasion. In the Tuscan tradition, this part is usually used fresh for Sunday lunch or for barbecues together with sausages. In short, it is a valuable part and excellent as a main course. And that’s what we tried to do together with Gino – a light salting, the addition of spices and a simple, short natural curing process.
